I made this salad for the ones who loves to eat fresh, simple and easy, and also for the vegetarians. It is a good source of protein and carbohydrates !

Serves: 3
Ingredients
1 can assorted kidney beans (540 gr)
⅓ teacup cus cus
1 hand full of fresh parsley finely chopped
the juice from ½ lemon
salt and pepper
1 full hand of baby carrots
green onion (or red onion, optional)
Instructions
Boil the cus cus in water with a pinch of salt.
Wash the parsley and chop it finely.
Boil also the carrots in a small pot.
In a bowl add all the ingredients, season with salt and pepper as you like, squeeze the lemon juice and serve.
If you like, you can add a small red onion or 3-4 green onions chopped.
It is delicious!
