Beans salad with cus cus

I made this salad for the ones who loves to eat fresh, simple and easy, and also for the vegetarians. It is a good source of protein and carbohydrates !
Serves: 3
  • 1 can assorted kidney beans (540 gr)
  • ⅓ teacup cus cus
  • 1 hand full of fresh parsley finely chopped
  • the juice from ½ lemon
  • salt and pepper
  • 1 full hand of baby carrots
  • green onion (or red onion, optional)
  1. Boil the cus cus in water with a pinch of salt.
  2. Wash the parsley and chop it finely.
  3. Boil also the carrots in a small pot.
  4. In a bowl add all the ingredients, season with salt and pepper as you like, squeeze the lemon juice and serve.
  5. If you like, you can add a small red onion or 3-4 green onions chopped.
  6. It is delicious!
