Black cherries cake

- 8 eggs
- 400 gr caster sugar
- 350 gr all purpose flour
- 1 tsp baking powder
- ½ tsp salt
- 1 lemon
- 180 ml oil
- 300 gr black cherries or regular cherries
- 1 tbsp flour for dusting the cherries
- Preheat the oven at 380 degrees F.
- Separate the egg whites from yolks and mix them well with a pinch of salt.
- add the sugar and mix well until dissolved.
- In a separate bowl, mix together the egg yolks with oil until creamy then add the lemon zest and the juice from the lemon.
- add this mixture to the whites and stir well until combined.
- Sift the flour and baking soda and add it to the batter gradually, mixing with a spatula or with a whisk from bottom up.
- bake it until a toothstick comes out clean.
