Ardei umpluti/ Stuffed bell peppers

Stuffed peppers are ones of my favorites. A food you do not eat too often, but when you do its worth it! The recipe is very simple,they can be filled with the meat you want, they are made with pork and without many other additions.
Cuisine: Mediterranean
  • 10-12 Bell peppers
  • 1 kg of minced pork (or mix of pork and beef)
  • 4 tablespoons rice
  • salt to taste
  • pepper
  • thyme (summer savory)
  • one large onion
  • a carrot (optional)
  • a few tablespoons oil to saute the onions
  • tomato juice or fresh tomato sauce
  • flour for tapping the ends
  • fresh dill
  1. Saute the onion in a few tablespoons of oil then mix it with meat, rice and spices. If you like, you can put a fine grated carrot and even a tablespoon or two of broth.
  2. Wash peppers well and clean the tabs then let them drain.
  3. Fill peppers with meat and coat with a little bit of flour at the ends so the meat wont get out. Be careful do not fill them till the edge!
  4. Put them in a saucepan and cover with water. Boil on low heat on the stove then you can bake them in the oven for about 40 minutes. Towards the end add chopped tomatoes or tomato sauce can be added as for your taste. Add salt if needed. If the meat wasnt very fatty add a few tablespoons of oil.
  5. Serve with sour cream and fresh herbs, especially dill!
  6. Enjoy your meal!
