Cheesecake "Padurea Neagra"/Black forest cheesecake
 
 
I don't think I've ever eaten something more delicious! I love the combination of chocolate and berries. They bring such an incredible freshness! You have to really try this, the texture is like icecream! I'm telling you, you will love it from the first bite! After the cheesecake with berries, this is the second preferred by my family, for me, it comes first!

  • Crust:
  • 200 gr biscuits
  • 100g butter
  • 2 tbsp cocoa
  • Or use chocolate biscuits! (Oreo crumbs ½ package)
  • Filling:
  • 2 Philadelphia cream cheese blocks (250 gr each)
  • 12 g gelatin (or 2 envelopes)
  • 150g icing sugar
  • 1 tsp vanilla essence
  • 150g melted dark chocolate ( 1½ bar)
  • 500 ml cream (35% fat) (2 cups)
Instructions
  1. Crust:
  2. Crush crackers in food processor then mix them with melted butter.
  3. Press the crumbs well into the cake pan then bake them for 10 minutes at 350F. You can leave the crust unbaked, just put t it in the fridge until you prepare the filling.
  4. Filling:
  5. Cover gelatin with lukewarm water and hydrate it for about 5 minutes, then dissolve it in microwave for 25 seconds or over simmering water.
  6. Mix cheese in food processor and until becomes creamy.
  7. Add sugar and vanilla.
  8. Add dissolved gelatin and mix well.
  9. Add melted chocolate ( melt the chocolate over a pot with simmering water) or in microwave.
  10. Whip the cream and fold it in the cream cheese mixture, after transfering the mixture into a separate bowl.
  11. Add the mixture on top of the crust and level with a spatula.
  12. Refrigerate cheesecake at least 4 hours before serving.
  13. Berries sauce:
  14. gr berries or cherries (sour cherries)
  15. tablespoons sugar
  16. Boil together and serve with a generous slice of cheesecake!
  17. Enjoy! It is too good not to try it ;-)
