Apple Caramel Cheesecake (no bake)

I wanted something special and with caramel, so I wanted to combine the flavor of caramel and apples into a cheesecake! It is a no bake cheesecake because it is light, I don't like the baked ones, to me are quite heavy...So i invite you to read my recipe. It is really easy to make!

Ingredients
  • Crust:
  • 300 gr Oreo cookie crumbs
  • 150 gr melted butter
  • Cheesecake:
  • 2 blocks Philadelphia cheese (250 gr each)
  • 500 ml whipping cream (35% fat)
  • 150 gr icing sugar
  • 1 tsp vanilla extract
  • 15 gr gelatine
  • 200 gr dulce de leche (from Bulk or a can)
  • 4-5 apples (Granny Smith, Red Prince)
  • Syrup ( for boiling the apples)
  • 1 cup sugar
  • 2 cups water
  • 1 stick cinnamon
  • 1 tsp vanilla extract
  • Caramel (home made)
  • 200 gr sugar (1 cup)
  • 200 ml whipping cream
  • 1 tbsp butter
Instructions
  1. Crust:
  2. Melt the butter and mix it with the cookie crumbs. Press the cookie crumbs into a baking pan (24cm diameter) and bake it for 10 min. at 375F.
  3. Cheesecake:
  4. Hydrate the gelatin in lukewarm water for 5 minutes (put it in cup and cover it with water)
  5. Put the cream cheese in the food processor and mix it until homogenized. Add sugar and vanilla and mix again until nice and creamy. Melt gelatine 30 seconds in the microwave and poor it in the cheese mixture. Mix well again.
  6. Beat the whipped cream until stiff and gently fold it into the cheese. I am always using a whisk!
  7. Poor half of the cheese mixture into the pan, add dulce de leche with a spoon then poor the other half of the cheese mixture. Level the surface of the cake with spatula and refrigerate for 4-5 hours.
  8. Syrup:
  9. Boil all the ingredients (water, sugar, vanilla and cinnamon) for 3-4 minutes then add the sliced apples and boil for another 10 minutes. Be careful not to boil them too long, depending on the apples, they might mash. I sliced the apples with the mandolin so they are all the same.
  10. After boiling and the apples became soft, strain them and set them aside on a plate with paper towel so they drain all the juice.
  11. Decorate the cheesecake with the apple slices, starting from the edge of the cake. In the middle I did 3 roses.
  12. I recommend to use caramel before serving, or if really wants caramel on the cake, poor the caramel on top of the apples. Caramel sauce must be hard, not liquid!
  13. Recipe for caramel (home made):
  14. Put sugar into a stainless steel pot and melt the sugar. Sugar must caramelize. Don't burn the sugar (sugar must have the colour of caramel). Take the pot out from the heat and add butter. Stir energetically then add the whipping cream and set it again on the heat. Stir until sugar (caramel) has dissolved. Then let it cool down (in the fridge or put the pot in a bowl with cold water). It will become real caramel, the thickness is like the one in Snikers or Twix!
