It is a delicious cake, a little moist and with fruits it is irresistible, especially those days when it is so hot!

  • 8 eggs
  • 400 gr caster sugar
  • 350 gr all purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 lemon
  • 180 ml oil
  • 300 gr black cherries or regular cherries
  • 1 tbsp flour for dusting the cherries
  1. Preheat the oven at 380 degrees F.
  2. Separate the egg whites from yolks and mix them well with a pinch of salt.
  3. add the sugar and mix well until dissolved.
  4. In a separate bowl, mix together the egg yolks with oil until creamy then add the lemon zest and the juice from the lemon.
  5. add this mixture to the whites and stir well until combined.
  6. Sift the flour and baking soda and add it to the batter gradually, mixing with a spatula or with a whisk from bottom up.
  7. bake it until a toothstick comes out clean.
  8. Enjoy!
