This cake is simply delicious, not too sweet, extremely delicate, easy to make and just gorgeous for an anniversary or for any holiday!

Ingredients
Betty Croker cake mix for the sponge
For the cream:
450 gr mascarpone cheese
300 ml whipping cream
1 tsp vanilla extract
10 gr granulated gelatin
For decorating:
100 gr (3 oz) white chocolate
100 gr (3oz) dark chocolate
250 ml whipped cream (1 cup)
Instructions
For the sponge fallow the directions on the package.
For the cream, heat the 300 ml whipping cream (on low heat) in a sauce pan till about to boil. Add white chocolate and stir well until combined and glossy, using a whisk.
Hydrate the gelatin in 50 ml lukewarm water. When the gelatin absorbed all the water, heat it 20 sec. in the microwave to dissolve.
Let the white chocolate mixture to cool down, then add dissolved gelatin and stir well to combine. Cool it in the fridge for about 10 min. (not more, it will make lumps because the gelatin will harden the cream).
Mix mascarpone cheese to soften for about 10 seconds ten add the chocolate mixture and beat it with an electric mixer until tick enough to be spread on the sponge cake.
Cut the sponge in 3 layers then spread the cream evenly.
To ornate, use whipped cream (1 cup) then sprinkle white and black chocolate all over the cake.
