Muffins cu afine/Blueberry muffins

- 2 cups all purpose flour
- ⅔ cup granulated sugar
- 2 teaspoons baking powder
- ¼ teaspoon baking soda
- pinch salt
- 1 egg
- 1 cup buttermilk
- ½ teaspoon vanilla extract
- 6 tablespoons unsalted butter, melted
- 1 cup blueberries dusted in a little all purpose flour
- Streusel
- ½ cup all purpose flour
- ½ cup turbinado or brown sugar
- 4 tablespoons butter
- pinch salt
- Muffins
- Preheat the oven to 350 degrees Fahrenheit. Grease the muffin pan well with butter or use cupcake liners.
- Mix the dry ingredients and set aside.
- Mix the buttermilk with the egg and then the remaining wet ingredients.
- Lightly dust the blueberries in a little flour and set aside.
- Pour the wet ingredients over the dry ingredients and gently fold together to combine. Make sure you don't over mix.
- Add the blueberries to the mixture carefully folding in.
- Divide the muffin batter into the muffin pan, cover each muffin generously with the crumble topping.
- Bake for 35 minutes or until a toothpick comes out clean when inserted into the middle of the muffin.
- Streusel
- Stir the dry ingredients together. Add the butter and using your hands mix the ingredients until there is a crumbly texture.
