Crepes are known world wide. they can be sweet or savory and can be served at any occasion My mom makes them quite often, I make them rarely because they are too good and i will eat them all :-)

Ingredients
  • 2 cups milk (500 ml)
  • 1 pinch of salt
  • 4 eggs
  • 2 cups flour (aprox. 300gr)
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • ¼ cup oil or 1 tbsp melted butter
  • oil for frying
Instructions
  1. Beat eggs with a pinch of salt then add milk and vanilla. Mix well until blended together. Add sifted flour and baking powder gradually, and mix energetically so the batter doesn't form lumps. The consistency of the batter should be like a thickened sour cream (or like buttermilk)
  2. Heat up a pan (Teflon coated) on medium heat. with a teaspoon of oil in it while heating it. Pour a spoon full of batter (soup spoon, the big one) in the middle of the pan and move the pan circularly so the batter spreads evenly. Batter should sizzle in the pan when you pour it on, that mens the pan was well heated!
  3. Let it cook for about 1 minute dragging the edges of the crepe with a knife or a silicon spatula. Heat should be on medium or low!
  4. When the crepe starts forming little holes and becomes partially cooked, flip it over and cook it for another 30 seconds or so. When it is well cooked should be golden in colour.
  5. Flip it on a plate and fill it with jam, Nutella, Cream cheese, pate, sauted mushrooms, whatever you like!!!
  6. If you don't want to fill them all up, you can cook them all and pile them up and then cover them with plastic foil and consume them later. They will keep nice and moist that way.
