IMG_8044IMG_8047Ingrediente: pentru 30 de tarte

240 gr unt nesarat la temperatura camerei

75 gr zahar

1 lingurita sare

1 ou

2 galbenusuri

350 gr faina

Crema de vanilie:

500 ml lapte

un baton vanilie

4 galbenusuri

180 gr zahar

60 gr unt

1/2 lingurita esenta migdale

1 lingura Amaretto (lichior migdale)

120 ml frisca batuta

60 gr amidon

Ornat:

250 gr fructe de padure (zmeura, afine, mure etc)

fructe tropicale (ananas, mandarine, kiwi etc)

Mod de preparare coji:

Frecam untul cu zaharul pana se face spumos, apoi adaugam oul si cele 2 galbenusuri si mestecam dupa fiecare aditie.

Adaugam faina treptat si sarea si formam o coca omogena, pe care o vom baga la frigider cca 30 de minute.

O scoatem din frigider si pe blatul de lucru pudrat cu faina intindem o foaie de cca 5 mm grosime pe care o putem decupa cu un pahar formand cerculete de diametrul formelor de tarte.

Punem cu grija cerculetele de coca in forme si coacem cojile cca 20 de minute pana cand marginile devin aurii.

Crema:

Punem laptele impreuna cu semintele si batonul de vanilie la incalzit intr-o craticioara cu fund dublu.

Intr-un bol separat amestecam oualele cu amidonul  si zaharul cu ajutorul unui tel subtire in forma de para ca sa nu faca cocoloase.

Cand laptele s-a infierbantat, il adaugam in fir subtire peste amestecul de galbenusuri, batand continuu si foarte energic. La inceput adaugam putin lapte si mixam bine, apoi putem adauga mai mult, ca sa nu se coaguleze galbenusurile.

Rasturnam compozitia inapoi in craticioara si o punem pe foc mediu amestecand tot timpul cu telul pana se ingroasa.

Cand crema este gata (dupa cca 5 min), o lasam sa se raceasca putin apoi adaugam untul, mixand bine.

La final adaugam esenta de migdale si lichiorul apoi acoperim crema cu o folie de plastic si o dam la rece.

Pentru asamblare, crema trebuie sa fie rece.

Intre timp batem frisca tare iar cand crema s-a racit, adaugam frisca si amestecam foarte bine.

Asamblare tarte:

In fiecare coaja, punem cate o lingura de crema, sau ca sa fie mai estetic, punem crema intr-un sac a poche si spritam crema cat sa se umple cojile.

Pe fiecare tarta punem fructe, ornand dupa cum ne place.

Se tin la rece si se papa pe nerasuflate :-)!

Ingredients
  • Crust:
  • 240 gr unsalted butter ( 1 cup)
  • 75 gr sugar (1/3 cup sugar)
  • 1 whole large egg
  • 2 egg yolks
  • 1 teaspoon salt
  • 350 gr flour (2½ cups flour)
  • Filling:
  • 500 ml milk ( 2 cups)
  • 4 egg yolks
  • 60 gr corn starch (1/4 cup)
  • 180 gr sugar (6 tablespoons)
  • 1 vanilla bean
  • 60 gr unsalted butter (4 tablespoons)
  • ½ teaspoon almond extract
  • 1 tablespoon almond liqueur
  • 120 ml whipping cream (1/2 cup)
  • Assembly:
  • 250 gr berries
  • exotic fruits
Instructions
  1. Crust:
  2. Beat butter and sugar together until smooth
  3. Add egg, egg yolks and mix well after each addition.
  4. Stir in the flour and salt until well incorporated and batter becomes hard enough, then wrap it in plastic foil and chill for at least 30 min.
  5. Preheat oven at 350 degrees F.
  6. On a floured surface, knead the dough just until softened.
  7. Roll the dough and cut out rounds to fit 25- 30mini tart shells . Line tart shells , dock with a fork and bake for about 20 minutes untill the edges becomes lightly brown.
  8. Chill for another 20 minutes before assembling.
  9. Filling:
  10. Heat milk withe the scraped seeds and vanilla bean.
  11. In a separate bowl, whisk together egg yolks, sugar and cornstarch.
  12. Slowly, add heated milk into the egg mixture, while whisking, then return to the pot.
  13. Over medium heat, whisk the milk constantly until thickened. Remove from heat and strain.
  14. Stir in butter, almond extract and almond liqueur.
  15. Cover top of the pastry filling directly with a plastic wrap and chill at least 2 hrs before assembling.
  16. When completely chilled, whip cream to stiff peaks and fold into the chilled cream.
  17. Assembly:
  18. Spoon or pipe a little filling to the mini tart shells and top with mix berries or with exotic fruits.
  19. Keep it chill and eat it with a lot of taste!

    daca incep ziua cu o tarta cu fructe cu siguranta voi avea o zi buna!

    Sunt grozave tartele astea, crema de vanilie imi plac tare mult…si in combinatie cu fructe are un aer asa fresh 😉

      Sa stii ca si mie imi plac teribil! din pacate nu le fac prea des ca sunt cam migaloase, dar merita tot efortul!
