Muffins cu afine/Blueberry muffins

Am mancat ieri o briosa buna de la Starbucks, plina cu afine si cu toppingul asta crocant deasupra, am baut si o cafea si mi s-a parut excelent. Am facut si eu muffins azi si ma declar multumita de consistenta aluatului cat si de toppingul de deasupra. Nu este prima oara cand pun “streusel” deasupra (acest topping crocant). Dar combinatia de pufos cu crocante o nebunie! sa va spun reteta mea!

Ingrediente (pentru 12 briose mici)

Se foloseste o cana de 250 gr (STAS) ca unitate de masura

2 cani faina (250 gr)

1 cana zahar (200 gr)

2 lingurite praf de copt (cernute)

1/4 lingurita bicarbonat de sodiu (cernut)

un praf de sare

1 ou

1 cana lapte batut (sau smantana)

85 gr unt moale

1  si 1/2 cana afine

Topping (Streusel)

1/2 cana faina (65 gr faina)

1/2 cana zahar brun  (sau alb) (100 gr)

60 gr unt

Se preincalzeste cuptorul la 375ºF. (190ºC)

Mixam untul cu zaharul pana se albeste. Adaugam oul intreg si omogenizam, apoi laptele batut si mixam pana la incorporare. Adaugam faina cernuta cu praful de copt si bicarbonatul si sarea si mixam intai la viteza mica apoi la viteza maxima pentru circa un minut. Curatam marginile bolului cu o paleta si omogenizam din nou.

Adaugam afinele si le incorporam cu o paleta de silicon , usor sa nu se zdrobeasca. Daca folosim afine congelate, le dam prin faina (cam o lingura se adauga peste ele ca sa se pudreze).

Pregim tava de briose in care punem hartiile speciale. Cu ajutorul unei linguri punem in fiecare hartiuta aluat. Hartiutele trebuie sa fie pline.

Toppingul:

Punem untul, faina si zaharul intr–un bol si amestecam cu mana pana cand se incorporeaza toate ingredientele. Trebue sa avem un aluat foarte sfaramicios.

Cu mana punem aluat sfaramicios peste briose si apoi le coacem in cuptor circa 30-35 de minute, pana se rumenesc frumos si trec testul scobitorii.

Eu le-am mancat caldute si mi-am facut si o cafea. Sunt minunate!!! Nici nu-mi mai trebuie altceva!

Ingredients
  • 2 cups all purpose flour
  • ⅔ cup granulated sugar
  • 2 teaspoons baking powder
  • ¼ teaspoon baking soda
  • pinch salt
  • 1 egg
  • 1 cup buttermilk
  • ½ teaspoon vanilla extract
  • 6 tablespoons unsalted butter, melted
  • 1 cup blueberries dusted in a little all purpose flour
  • Streusel
  • ½ cup all purpose flour
  • ½ cup turbinado or brown sugar
  • 4 tablespoons butter
  • pinch salt
Instructions
  1. Muffins
  2. Preheat the oven to 350 degrees Fahrenheit. Grease the muffin pan well with butter or use cupcake liners.
  3. Mix the dry ingredients and set aside.
  4. Mix the buttermilk with the egg and then the remaining wet ingredients.
  5. Lightly dust the blueberries in a little flour and set aside.
  6. Pour the wet ingredients over the dry ingredients and gently fold together to combine. Make sure you don't over mix.
  7. Add the blueberries to the mixture carefully folding in.
  8. Divide the muffin batter into the muffin pan, cover each muffin generously with the crumble topping.
  9. Bake for 35 minutes or until a toothpick comes out clean when inserted into the middle of the muffin.
  10. Streusel
  11. Stir the dry ingredients together. Add the butter and using your hands mix the ingredients until there is a crumbly texture.
