Apple Caramel Cheesecake (no bake)

Am vrut ceva nou si mai deosebit si imi doream ceva cu caramel. Combinatia asta este nemaipomenita. Nu mi-am imaginat ca poate fi atat de bun, cheesecake cu mere si cu caramel. Si bineinteles fara coacere pentru ca cele coapte sunt grele…cel putin pentru mine!

Va invit sa il incercati! Nu o sa aveti regrete!

Ingrediente pentru o forma detasabila cu diametrul de 24 cm

Crusta

300 gr oreo crumbs (pezmet de biscuiti de cacao)

150 gr unt topit

Crema

500 gr crema de branza (Philadelphia sau alta marca)

1 lingurita esenta de vanilie

150 gr zahar pudra

500 ml frisca (35% grasime)

15 gr gelatina

200 gr dulce de lecce (din comert)

4-5 mere semi acrisoare ( Granny Smith, Red Prince)

Sirop de mere

o cana zahar (pentru siropul de mere)

2 cani apa

1 baton scortisoara

1 lingurita esenta vanilie

Mod de preparare:

Incepem cu crusta de biscuiti. Eu i-am cumparat deja pisati, deci erau deja pesmet. Daca nu gasiti asa, puteti sa puneti biscuitii de cacao (Oreo de preferinta) in robotul de bucatarie sau se macina frumos cu batatorul de carne dupa ce i-ati pus intr-o punga.

Topim untul si amestecam cu biscuitii sfaramati. Punem mixul intr-o forma detasabila si presam cu mana ca sa uniformizam. Coacem crusta 10 minute in cuptorul preincalzit la 375ºF (200 ºC), apoi lasam sa se raceasca.

Crema:

Hidratam gelatina in apa calduta cca 5 minute. Intre timp mixam branza cca un minut ca sa se omogenizeze. Adaugam zaharul pudra si mixam in continuare, cu o paleta curatam marginile bolului ca sa nu faca cocoloase.

Topim gelatina pe baie de abur (sau microunde cca 30 sec.) si o adaugam peste branza. Mixam iar ca sa se incorporeze. Adaugam si vanilia.

Batem frisca tare si o incorporam in branza cu ajutorul unei palete de silicon, ca sa fie cat mai pufoasa crema.

Punem jumatate din crema de branza in forma de tort, apoi din loc in loc punem dulce de lecce cu lingura. Eu am pus pe toata suprafata, ca niste guguloaie asa, sa arate frumos cand taiem.

Deasupra am pus restul de crema de branza si am nivelat cu o spatula.

Dam la rece ca 4-5 ore ca sa se inchege bine.

Intre timp pregatim merele si facem un sirop din apa si zahar in care vom fierbe putin merele ca sa fie usor de modelat si bineinteles usor de mancat :-).

Eu am feliat merele cu mandolina ca sa fie toate la fel. nu le-am curatat pentru ca au aspect mai frumos cu coaja. In craticioara de inox am pus doua cani de apa si o cana de zahar, am adaugat vanilie si un baton de scortisoara apoi am adaugat merele feliate si am fiert cam 10 minute. merele trebuie sa ramana intregi, sa nu se rupa!

Le-am svos apoi pe o farfurie pe care am pus servet aborbant si le-am lasat sa se raceasca.

Dupa cele 4-5 ore, am scos cheesecake-ul din forma detasabila si l-am ornat cu mere si caramel. Am avut niste caramel pastrat la frigider facut chiar de mine. daca nu vreti sa va complicati prea mult, cumparati topping caramel pentru inghetata si il puneti pe felia de tort chiar inainte de a-l servi. Eu am pus intai dedesubtul merelor si mi s-a scurs aproape tot pe margine, asa ca e mai bine sa puneti direct merele deasupra.

Am ornat tortul cu felii de mere pe care le-am pus de jur imprejur , incepand de pe margine. In mijloc am facut 3 trandafirasi sa fie cat mai aratos :-).

l-am savurat cu mare placere si chiar a mers si a doua felie!!!

Il recomand fara ezitare, nu este deloc greu de facut si este de foarte mare efect!!!

I wanted something special and with caramel, so I wanted to combine the flavor of caramel and apples into a cheesecake! It is a no bake cheesecake because it is light, I don't like the baked ones, to me are quite heavy...So i invite you to read my recipe. It is really easy to make!

Ingredients
  • Crust:
  • 300 gr Oreo cookie crumbs
  • 150 gr melted butter
  • Cheesecake:
  • 2 blocks Philadelphia cheese (250 gr each)
  • 500 ml whipping cream (35% fat)
  • 150 gr icing sugar
  • 1 tsp vanilla extract
  • 15 gr gelatine
  • 200 gr dulce de leche (from Bulk or a can)
  • 4-5 apples (Granny Smith, Red Prince)
  • Syrup ( for boiling the apples)
  • 1 cup sugar
  • 2 cups water
  • 1 stick cinnamon
  • 1 tsp vanilla extract
  • Caramel (home made)
  • 200 gr sugar (1 cup)
  • 200 ml whipping cream
  • 1 tbsp butter
Instructions
  1. Crust:
  2. Melt the butter and mix it with the cookie crumbs. Press the cookie crumbs into a baking pan (24cm diameter) and bake it for 10 min. at 375F.
  3. Cheesecake:
  4. Hydrate the gelatin in lukewarm water for 5 minutes (put it in cup and cover it with water)
  5. Put the cream cheese in the food processor and mix it until homogenized. Add sugar and vanilla and mix again until nice and creamy. Melt gelatine 30 seconds in the microwave and poor it in the cheese mixture. Mix well again.
  6. Beat the whipped cream until stiff and gently fold it into the cheese. I am always using a whisk!
  7. Poor half of the cheese mixture into the pan, add dulce de leche with a spoon then poor the other half of the cheese mixture. Level the surface of the cake with spatula and refrigerate for 4-5 hours.
  8. Syrup:
  9. Boil all the ingredients (water, sugar, vanilla and cinnamon) for 3-4 minutes then add the sliced apples and boil for another 10 minutes. Be careful not to boil them too long, depending on the apples, they might mash. I sliced the apples with the mandolin so they are all the same.
  10. After boiling and the apples became soft, strain them and set them aside on a plate with paper towel so they drain all the juice.
  11. Decorate the cheesecake with the apple slices, starting from the edge of the cake. In the middle I did 3 roses.
  12. I recommend to use caramel before serving, or if really wants caramel on the cake, poor the caramel on top of the apples. Caramel sauce must be hard, not liquid!
  13. Recipe for caramel (home made):
  14. Put sugar into a stainless steel pot and melt the sugar. Sugar must caramelize. Don't burn the sugar (sugar must have the colour of caramel). Take the pot out from the heat and add butter. Stir energetically then add the whipping cream and set it again on the heat. Stir until sugar (caramel) has dissolved. Then let it cool down (in the fridge or put the pot in a bowl with cold water). It will become real caramel, the thickness is like the one in Snikers or Twix!
