Beef Stroganoff

Ingrediente: pentru 6 portii

300 gr ciuperci proaspete

700 gr carne de vita (muschi)

2 cepe medii

1 catel de usturoi

piper dupa gust

50 gr unt

3 linguri ulei

350- 400 ml supa de carne

1/2 lingurita sare

200 ml smantana

patrunjel verde

1 lingura faina

1 pachet paste (cu ou)

Mod de preparare:

  • Spalam carnea apoi o feliem foarte subtire perpendicular pe fibra cam de 4 mm.
  • Intr-un wok sau tigaie teflonata topim putin untul si apoi adaugam ciupercile feliate, ceapa tocata marunt si catelul de usturoi pisat si lasam pe foc, amestecand din cand in cand, pana cand ceapa s-a inmuiat.
  • Le rasturnam intr-un catron si in acelasi wok punem 3 linguri de ulei si pregatim carnea de vita pana cand se rumeneste usor. Adaugam supa de carne, dar oprim 100 ml, si lasam sa fiarba pana cand carnea devine frageda. Cei 100 ml ii amestecam cu faina apoi turnam amestecul peste carnea de vita din wok si mai lasam sa dea 2-3 clocote.
  • Rasturnam si ciupercile peste carne, amestecam, apoi asezonam cu sare si piper dupa gust.
  • Tragem tigaia de pe foc si incorporam smantana treptat in sos.
  • Pastele se fierb conform instructiunilor de pe ambalaj, se scurg bine de apa se spala intr-un jet de apa rece apoi se pot servi impreuna cu sosul de carne si ciuperci. Deasupra presaram putin patrunjel verde tocat fin.

Serves: 6
  • 1½ pounds beef sirloin steak, ½ inch thick
  • 8 ounces fresh mushrooms, sliced (2½ cups)
  • 2 medium onions, thinly sliced
  • 1 garlic clove, finely chopped
  • ¼ cup butter or margarine
  • 1½ cups beef flavored broth (from 32-ounce carton)
  • ½ teaspoon salt
  • ¼ cup all-purpose flour
  • 1½ cups sour cream
  • 3 cups hot cooked egg noodles
  1. Cut beef across grain into about 1½x1/2-inch strips.
  2. Cook mushrooms, onions and garlic in butter in 10-inch skillet over medium heat, stirring occasionally, until onions are tender; remove from skillet.
  3. Cook beef in same skillet until brown. Stir in 1 cup of the broth and the salt.Heat to boiling; reduce heat. Cover and simmer 15 minutes.
  4. Stir remaining ½ cup broth into flour; stir into beef mixture. Add onion mixture; heat to boiling, stirring constantly. Boil and stir 1 minute. Stir in sour cream; heat until hot (do not boil). Serve over noodles.
