Cheesecake “Padurea Neagra”/Black forest cheesecake

IMG_8175Nu cred ca am mancat vreodata ceva mai delicios! Imi place super mult combinatia de ciocolata si fructe de padure, ii da o prospetime incredibila! Trebuie sa il incercati neaparat! va spun, o sa va indragostiti iremediabil! Dupa cheesecakul cu fructe de padure, asta edte al doilea preferat de familia mea, pentru mine, este pe primul loc! Ingrediente:

Blat de biscuiti:

  • 200 gr biscuiti
  • 100 gr unt
  • 2 linguri cacao
  • Sau folositi biscuiti cu cacao!

Crema:

  • 2 pachete branza Philadelphia
  • 12 gr gelatina
  • 150 gr zahar pudra
  • 1 lingurita esenta vanilie
  • 150 gr ciocolata neagra topita
  • 500 ml frisca lichida (35% grasime)IMG_8133Mod de preparare:

Blatul: macinam biscuitii in robotul de bucatarie apoi ii amestecam cu untul topit. Daca folosim biscuiti normali, adaugam 2 linguri de cacao.

Presam bine blatul de biscuiti intr-o forma de tort (diam 24cm) si coacem blatul 10 minute in cuptor.

Crema:

  • Punem branza in robotul de bucatarie si o mixam bine pana devine cremoasa.
  • Adaugam zaharul pudra si vanilia si omogenizam.
  • Hidratam gelatina in putina apa calduta apoi o bagam la microunde 25 de secunde ca sa se dizolve. Daca nu folositi microunde, se topeste pe baie de aburi!
  • Adaugam gelatina dizolvata si mixam bine.
  • Adaugam si ciocolata topita pe bain marie si omogenizam.
  • Frisca lichida o mixam pana devine tare.
  • Transferam crema de branza intr-un castron separat ca sa o omogenizam cu frisca.
  • Cu ajutorul unei palete, introducem frisca in crema de branza amestecand de jos in sus, cu miscari ample.
  • Punem crema de branza peste blatul de biscuiti si nivelam frumos cu o spatula.
  • Refrigeram cheesecak-ul cel putin 4 ore inainte de a-l savura 🙂

Sos de fructe de padure:

  • 500 gr fructe de padure sau numai visine
  • 4 linguri zahar

Se fierb impreuna si se serveste cu o felie generoasa de cheesecake!

I don't think I've ever eaten something more delicious! I love the combination of chocolate and berries. They bring such an incredible freshness! You have to really try this, the texture is like icecream! I'm telling you, you will love it from the first bite! After the cheesecake with berries, this is the second preferred by my family, for me, it comes first!

Ingredients
  • Crust:
  • 200 gr biscuits
  • 100g butter
  • 2 tbsp cocoa
  • Or use chocolate biscuits! (Oreo crumbs ½ package)
  • Filling:
  • 2 Philadelphia cream cheese blocks (250 gr each)
  • 12 g gelatin (or 2 envelopes)
  • 150g icing sugar
  • 1 tsp vanilla essence
  • 150g melted dark chocolate ( 1½ bar)
  • 500 ml cream (35% fat) (2 cups)
Instructions
  1. Crust:
  2. Crush crackers in food processor then mix them with melted butter.
  3. Press the crumbs well into the cake pan then bake them for 10 minutes at 350F. You can leave the crust unbaked, just put t it in the fridge until you prepare the filling.
  4. Filling:
  5. Cover gelatin with lukewarm water and hydrate it for about 5 minutes, then dissolve it in microwave for 25 seconds or over simmering water.
  6. Mix cheese in food processor and until becomes creamy.
  7. Add sugar and vanilla.
  8. Add dissolved gelatin and mix well.
  9. Add melted chocolate ( melt the chocolate over a pot with simmering water) or in microwave.
  10. Whip the cream and fold it in the cream cheese mixture, after transfering the mixture into a separate bowl.
  11. Add the mixture on top of the crust and level with a spatula.
  12. Refrigerate cheesecake at least 4 hours before serving.
  13. Berries sauce:
  14. gr berries or cherries (sour cherries)
  15. tablespoons sugar
  16. Boil together and serve with a generous slice of cheesecake!
  17. Enjoy! It is too good not to try it 😉

    As vrea sa fac reteta asta pentru craciun, insa intr-o varianta mai light, ca am niste persoane care n-au voie grasimi. Merge sa folosesc frisca vegetala tip Hulala?
    Si inca ceva, sosul de fructe se intareste dupa racire? Ca as vrea sa servesc cheesecake-ul si a doua zi, sa stiu daca se inmoaie prin incalzire sau fac 2 portii.

      Buna Roxana,
      Se poate folosi frisca de orice tip, Hulala este buna!
      Sosul de fructe nu se intareste pentru ca nu se pune gelatina, se pune pe felia de tort inainte de a se servi!

    Spuneti-mi va rog ,ce este alb pe cheescake, este frisca?cand se pune?la servire?

      Cheesecake-ul se orneaza cu frișcă pe deasupra. La servire se pune sos de fructe de pădure deasupra.
